    I was reading a little more about health benefits about tea. I read that it does make a difference on the heat of the water that you steep your tea in.The water should be just to the point of boiling. This will cause the tea leaves to unfold releasing their essential oils and other ingredients. It takes about about 3 minutes for all the catechins in the tea leaves to make their way into the liquid. For the best health benefits steep even longer.     I also read that you don't want to drink scalding hot temperatures because it increases the risk of esophageal caner.

  2. True. The water should be heated just to the point of boiling so that the resulting infusion is at its most potent and beneficial.
